Ingredients
- •120g soft pitted dates (Approx 8-9)
- •100g white sesame seeds (80g for Burfi, 20g for Topping)
- •1 tbsp ghee
- •1/2 tsp cardamom powder
- •Pinch salt
- •Warm water to soak dates.
Method
- 1
Soak dates in warm water for 10 minutes. Drain and blend to a smooth thick paste.
- 2
Dry roast sesame seeds on a low heat for 4-5 minutes. They should be golden and aromatic. Leave to cool completely. Set aside 20g for topping. Pulse the remaining 80g to a coarse texture. (A few short pulses so they don’t become buttery.)
- 3
Melt the ghee in a pan on a low heat. Add the date paste and cook for 3 minutes. Stir regularly until thick.
- 4
Remove from the heat. Add the ground sesame seeds, cardamom and salt. Mix to form a thick sticky dough.
- 5
Spoon into a greased 6inch tray lined with baking paper. Sprinkle with the reserved roasted sesame seeds and press down slightly. Place in the fridge to chill for 1 hour. Cut into 12 pieces.
