Ingredients

  • •Ragi base
  • •Ragi flour (Finger millet): 1 cup (100 g)
  • •Extra virgin olive oil: 1 tbsp (15 ml)
  • •Italian mixed herbs / dried oregano: ½ tsp
  • •Salt: ½ tsp
  • •For the Sauce & Toppings:
  • •Homemade tomato basil sauce or sugar-free marinara: 4 tbsp (60 g)
  • •Mozzarella cheese (shredded): ¾ cup
  • •Bell peppers (capsicum): ½ cup, thinly sliced
  • •Red onion: ¼ cup, thinly sliced
  • •Button mushrooms or sweet corn: ¼ cup, sliced
  • •Fresh basil leaves: a few, torn
  • •Chilli flakes & dried oregano: for finishing

Method

  1. 1

In a mixing bowl, combine ragi flour, salt, garlic powder, and dried herbs. Add 1 tbsp olive oil and mix into the flour. Gradually incorporate warm water and knead for 3–4 minutes until a smooth, non-sticky, pliable dough ball forms.

  2. 2

Divide the dough into two equal portions. Place each ball between two sheets of parchment paper (or a lightly oiled surface) and roll or gently press out with your fingers into a 6–7 inch round base, roughly ¼-inch thick. Prick the entire surface with a fork to prevent puffing.

  3. 3

Heat a flat tawa or skillet over medium heat. Carefully transfer the rolled base onto the tawa. Cook for 2 minutes on the underside, flip, and cook the top side for another 1–2 minutes until firm and dry to the touch. Remove from heat.

  4. 4

Place bases on a lined baking tray and pre-bake at 200°C (400°F) for 6–8 minutes until firm.

  5. 5

Spread 2 tablespoons of tomato sauce evenly over the pre-cooked side of each crust. Scatter half the mozzarella cheese, arrange sliced onions, bell peppers, and mushrooms, then top with the remaining cheese. Melt and crisp

  6. 6

Place the assembled pizza back on the tawa over a low flame. Cover tightly with a domed lid and cook on low heat for 5–7 minutes until the cheese is completely melted and the bottom crust turns crisp.

  7. 7

Bake at 200°C (400°F) for 7–9 minutes, optionally turning on the broiler for the final 60 seconds until the cheese is bubbling and golden.

  8. 8

Finish and serve: Sprinkle with chilli flakes, oregano, and torn basil. Slice warm and serve immediately.
