Spicy Veggie Bean Pot

Usually, evenings come along with spicy hunger pangs or say craving and at some of the other corner, we all think of some chapati Indian food to treat the same. But in a second, a thought of healthy management ruins it all. Well, from now on this won’t be the case anymore! Because here we are with this spicy veggie bean bowl with loads of nutrition and spices. A worthy and nutritious recipe to be added to your cookbook.

Nutritional Values:

Turtle like black shiny beans are the rich source of fiber, protein, vitamins A. They also have a significant amount of iron, calcium and manganese. Black beans are also rich in flavonoids, particularly anthocyanin, which has amazing antioxidant properties including omega-3 fatty acid, which is considered a good form of cholesterol.

Quinoa the nest main ingredient has a good content of flavonoids which also includes quercetin and kaempferol. These are powerful plant antioxidants which have abundant health benefits. Also, quinoa is high in protein and contains all the essential amino acids needed by your body. Apart from that, it’s much higher in fiber.

Ingredients:

  • 1 teaspoon olive oil, for sautéing
  • 20 grams onion, diced
  • 2-3 cloves of garlic, minced
  • 20 grams of bell pepper, any color, diced
  • 15 grams of black beans, drained and rinsed
  • 20 grams; tomatoes, diced
  • 1 tablespoon of cooked quinoa
  • 1 cup water

Spice Blend:

  • ¼ teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon cinnamon
  • Salt and pepper, to taste
  • ½ tsp lime juice
  • avocado, for topping

Proteins – 4.91 grams
Fat – 5.5 grams
Carbohydrates – 18.76 grams

Method:

  • Take a large pot and set it on a medium-high flame, add oil and sauté onion and garlic for 3 minutes.
  • Add bell pepper and sauté for about 3-4 minutes. Add black beans, tomatoes, water, quinoa and the spices.
  • Bring it to boil and then decrease the heat and let it simmer for 10 minutes.
  • Pour it in a bowl and top it with avocados and enjoy the spicy treat.
