Method

  • Take a small bowl, add lime juice, cumin, oil and ½ tsp salt and pepper.
  •  Put rice and beans in serving bowls. Top them with the lettuce, tomatoes, cilantro and avocado.
  • Sprinkle with red onion then, drizzle some olive oil for dressing. Serve it with homemade yoghurt spread or lime wedges, and hot – pepper sauce, the way to like it.
