Ingredients

  • 90 grams cooked basmati rice
  • 1 teaspoon mustard oil
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • 5-6 curry leaves
  • 10-12 cashew nuts
  • 1 small grated carrots
  • ½ finely chopped onion
  • 1 green chilly chopped
  • 1 bay leaf
  • ½ teaspoon turmeric powder
  • Salt to taste

Carbs- 19.2 grams
Protein- 2.5 grams
Fats- 2.3 grams

Method

  • In a pan, heat oil. Add mustard seeds, cumin seeds, bay leaf and curry leaves. Let it crackle.
  • Stir in cashew nuts, mix well till golden brown.
  • Now add onions and green chili, sauté till it turns translucent.
  • Add carrots. Cook well.
  • Add salt and turmeric powder and mix thoroughly.
  • Mix in cooked rice. Give a good toss for a minute. Remove from flame.
  • Serve hot with raita.
